Lead by Yong-Su Jin, researchers at the University of Illinois Energy Biosciences Institution claim that they have come up with a strain of yeast which can have a huge impact for lushes everywhere by reducing the painful morning hangover that people tend to have after a night out as well as increase the health benefits which are associated with alcoholic drinks.
According to the researchers all this comes down to the “designer yeast.” Using what they referred to as a “genome knife,” Yong-Su Jin and his fellow researchers at the university succeeded in altering the genes which are within specific strains of yeast so as to “jailbreak” it. Yong-Su Jin claims that this process makes it possible for wine makers to tinker with yeast strains so as to increase the health components which are found in wine, these components include resveratrol, while at the same time reducing the amount of toxic byproduct which are known to bring about the hangover effect once someone has had a little bit too much to drink.
